Eduard's bees spend the summer working a Pick Your Own fruit and vegetable farm at Iver in Buckinghamshire, and you can taste exactly where they've been. This is a smooth, easy honey with a gentle fruity warmth — think ripe peaches on a summer afternoon. Completely moreish, and the kind of extraordinary honey that people who thought they knew what honey tasted like just love discovering.
Eduard has been keeping bees for over ten years, with hives dotted across several sites. He builds all his own hives and equipment — he's a carpenter in the winter months — and his wife helps with the business while he's out with the bees. I always get a wonderfully warm welcome when I visit, with plenty of family news (and bee news) to catch up on.
