Just 250 jars of this honey were produced by bees kept in fields on Matthew's family farm at Tamworth, just on the border of Warwickshire and Staffordshire.
It was taken early in the season as the oil seed rape was in bloom and the hawthorn out and makes a lovely pale, creamy honey that is perfect on toast and totally more-ish! It has a confectionery feel to it, but then a savoury end note so it's not too sweet at all.
