The bees in John's garden made enough of this honey in August 2021 to fill just 204 jars! It's not many jars, but it's such a treat to taste honey how the bees made it. This one is a floral / woody honey with almost a bitter end note, which sounds an odd description for honey, but what I mean is it's sweetness disappears so it's easier to taste the other elements of the honey, not just its sweetness.
John is in a very rural location with such a mix of flowers around them, from trees to hedgerows, other gardens and further away fields that sometimes have crops growing that bees like.
Until recently John combined beekeeping with shepherding; raising lambs over winter, and then beekeeping in the spring Now he’s cut back and focuses only on the bees, working with a fellow beekeeper who’s in his 90’s, so John is called ‘the boy’!
John has an engineering mind and helped design farm machinery back in the 1970's that’s still in use today - I loved being shown it all.
