Just 230 jars of this honey were produced by bees that Thomas keeps in the wood margins around his home in Walton, Yorkshire. This honey has a floral flavour note to it, but it's less sweet than the honey from his bees kept just by the woods - this one makes your mouth water and has a really long savoury end note to it.
Thomas started beekeeping during lockdown when he was living with his Grandad in Walton, a village in Yorkshire. He's a recent engineering graduate and always loved making things so when I went to visit he was building hives from scratch - no cheating by getting a 'flat pack' hive!
He keeps all his bees hidden around the house as he likes the idea of each hive having it's own special, secluded spot. It made our walk feel like a treasure hunt, I loved it!
We include the story of the beekeeper and send the honey packed in hay grown in fields near us. All our packaging is plastic-free, recyclable and UK made.
