Raw Honey from Elkington, Northamptonshire UK (caramel)

The joy of working with small scale beekeepers is that you know exactly when the honey was taken from the hive - this honey was taken off the bees mid July and has a different flavour to the June honeys. This one has a natural caramel flavour note to it, compared to the floral and fresh honeys the bees made back in June, which is a perfect illustration of how the character of each honey changes to reflect the flowers, bees and weather at the time they made it.

Neil kept these bees in the lee of Honey Hill with lovely views across the hills of Northamptonshire.
