This honey is Keith Lomax who keeps his hives in his brother's garden at Burnham-on-Crouch - a garden they share with gorgeous rabbits and a fishpond - which the bees will like for their water supplies.  Burnham is an old fishing town, once famous for oysters and smugglers.  Keith was born and bought up there and moved back home after retiring from work in London.  He found a local group and took up beekeeping about 5 years ago. His bees probably visited the nearby Lucerne fields with their beautiful blue / purple flowers as they were in full bloom just before he harvested this honey.  This is a pale honey with caramel and vanilla flavour profile.
